You can now press Shift+Enter to insert another paragraph in a table. Then type "- " to start a list.
We are starting working on it, in addition to other improvements for tables. No ETA.
You cannot. It is not a gitbook thing. It is limitation of Markdown table syntax. You cannot enter multiple lines.
In order to use fully formatted cell content, we need new syntax. Tha is why I started to work for Markdown 2 specification years ago. See here my proposed new Table syntax that will allow to enter enything into cells and keep document text readable.
But I did not got enough attention.

I succeeded to make multilines through Github editor. But I need to include <br/> tag in a onliner text. Not easy to use. I think it's possible to improve the gitbook editor to add <br/> tag when I type [Ctrl]+[Enter] or [Shift]+[Enter].
I noticed that github accepted <ul><li><br/><a> tags while gitbook only accepts <br/> and <a> tags.
Is the source code of gitbook v2 is open? I am warm to make a PR :-)

@Samy Pessé: The key, I think, is to add the possibility of doing [CTRL]+[ENTER] to create new line in a table cell.
@Jonathan B: Yes, but it's already supported in this module. I Just need to find the best way to make it work with our GitHub sync (export to markdown).

One potential issue with 'lists' and 'new lines' in tables is that it'll not work with our GitHub integration.
Markdown (at least the GitHub Flavored markdown) doesn't support new lines in tables.
Allowing these content in tables will force to serialize in markdown as something else than a normal table.
On another matter, we are internally discussing adding a "columns" type of content to have side-by-side content. Will it be a potential solution to your problem ?

We want migrate from wordpress to gitbook to write all our procedures. The format we are currently using is a table with http link, bulletlist and paragraph.
I don't know if columns may be a solution.
